For consistently delicious jerky, be sure to use the recommended amount of meat for each package. Follow these simple marinade methods for the best results:
For ground meat jerky: - For the entire 5 lb. package: dissolve the seasoning and cure packets in 5 ounces of water. - For the entire 25 lb. package: dissolve the packets in 25 ounces of water. - For smaller batches: dissolve 7 teaspoons of seasoning, a scant 1/4 teaspoon of cure, and 1 ounce of water per pound of meat.
After marinating, follow these steps to process your jerky: - Preheat oven to 200° F and dry for 1 hour and 15 minutes on each side, or until desired texture is achieved. - Place on rack in dehydrator and dry according to manufacturer's instructions.
Remember to refrigerate or freeze the finished product and keep cure out of reach of children. The seasoning contains ingredients like fructose, sugar, salt, yeast extract, and natural flavors, while the cure includes salt, sodium nitrite, and FD&C Red #3 for color.
